INGREDIENTS & SUBSTITUTIONS

Puff Pastry – I typically use any brand of store-bought puff pastry for this recipe. If puff pastry is unavailable, consider using pie crust as an alternative.

Strawberry Jam – any homemade or store-bought jam will work just fine. Bonne Maman makes a delicious strawberry preserve that is perfect for this giant strawberry pop tart. Feel free to experiment with different fruit preserves, compotes, or even chocolate spreads for a unique flavor twist.

Powdered Sugar – confectioners’ sugar or icing sugar can be used as an alternative to achieve the desired sweetness in the icing.

Heavy Cream – regular or dairy-free is my go-to for icing, but if heavy cream is not available, whole milk or half-and-half can be used as a substitute, adjusting the quantity as needed.

Egg (for egg wash): for any egg-wash recipe, you can use milk or cream as a substitute for a shiny finish. I used egg + water for this giant strawberry pop tart.

Sprinkles – any rainbow sprinkles will do for this recipe. Get creative with various toppings like chopped nuts, shredded coconut, or colorful sanding sugar to make this pop tart your own work of art.

How to make the Giant Strawberry Pop Tart

Preheat Your Oven:

Start by preheating your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.

Assemble the Pop Tart:

Begin by rolling out one sheet of the puff pastry on a floured surface until it reaches 9×15 inches. Evenly spread your preferred fruit jam, leaving a border to seal the pop tart. Next, roll out the second sheet of puff pastry and place it on top of the sheet with jam. Crimp the edges with a fork to seal in the pop tart. Additionally, gently poke a few holes across the surface of the pastry.

Egg Wash:

Whisk together 1 tablespoon of water and 1 egg, then delicately brush this wash over the top for a stunning, golden finish.

Bake Your Giant Strawberry Pop Tart:

Place the giant pop tart in the oven and keep a close eye while it bakes. Oven temperatures can vary, so check in to see once that golden-brown hue starts to develop around the 15-minute mark.

Make the Icing:

Add 2 cups of powdered sugar and 1/4 cup of heavy cream to a bowl and mix. Adjust the ratio of powdered sugar to heavy cream to achieve your desired icing consistency. Add more sugar for a thicker glaze or more cream for a lighter drizzle.

With a sugar cookie base and plenty of Pop Tarts throughout, these Pop Tart Cookies are a blast from the past that'll make everyone smile!

Ingredients

  • ¾ cup butter softened
  • 2 ounces cream cheese
  • 1 cup sugar
  • 1 tablespoon corn syrup
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 8 Pop Tarts* divided

Icing, Optional

  • 1 cup powdered sugar
  • 1 ½ tablespoons water
  • food coloring & sprinkles if desired

Instructions
 

  • Preheat oven to 350°F.
  • In the bowl of a stand mixer, mix the butter and cream cheese until smooth.
  • ¾ cup butter,2 ounces cream cheese
  • Add the sugar and corn syrup and mix until light and fluffy.
  • 1 cup sugar,1 tablespoon corn syrup
  • Stir in the egg.
  • 1 egg
  • Add the flour, baking soda and salt; stir until combined.
  • 2 cups flour,1 teaspoon baking soda,½ teaspoon salt
  • Coarsely chop 6 of the Pop Tarts; stir them into the batter.
  • 8 Pop Tarts*
  • Scoop onto a parchment-lined baking sheet and use your palm to press them down to about ½ inch thickness.
  • Chop up the remaining Pop Tarts and press them into the tops of the cookies.
  • Bake for 10-12 minutes or until just barely golden brown around the edges. They will still be soft, but will firm up once they cool.

Icing

  • If you choose to add a drizzle of icing, stir together the powdered sugar and water. Add food coloring, if desired.
  • 1 cup powdered sugar,1 ½ tablespoons water,food coloring & sprinkles
  • Drizzle the icing over the cooled cookies and add sprinkles, if desired.

Notes

*You can use about any flavor of Pop Tart for these.  Our personal favorites are cherry, blueberry, strawberry and brown sugar cinnamon.  If you choose to make them with brown sugar cinnamon Pop Tarts, I recommend using brown sugar in place of the white sugar in the cookie dough.
